Its citrus-like acidity makes it effervescent and electric, with very healthy parameters: 7.5 g of acidity and a pH of 3.45. With time, a spicy character emerges that recalls Chinon and also evokes one of my favorite wines from Bordeaux, Lafleur from Pomerol. It is undoubtedly world-class and well worth cellaring, as it will continue to gain complexity in bottle. One of those wines where the only improvement I can imagine would be having it in magnum rather than bottle.
